Most astronomers only use telescopes a few night each year, and they spend the rest of the time analyzing the data they have and writing papers about their results. The people who watch the stars the most are actually the AMATEUR astronomers, people who have jobs unrelated to astronomy but who love the stars. Now, many professional astronomers (like me) also observe as "amateurs" for fun, because the night sky is such a beautiful thing.
